Pumpkin for Breakfast

Raise your hand if you still aren't tired of pumpkin? I've been drinking PSL's since they started brewing them in early September and cannot get enough of those Thanksgiving pumpkin pie leftovers. If you can relate, you just might be in luck! Now that the Christmas season is upon us that means that peppermint is in and pumpkin spice is out, right? WRONG. This super simple pumpkin coffee cake recipe changes everything. Thanks to this health guru, we can all add just a little more pumpkin to our daily diets.

This healthy breakfast treat goes perfect with my other true love: almond butter. So, basically this combination is all of my foodie dreams come true. If you've been on the hunt for comfort food that tastes good AND feels good, look no further!

  • .5 Cup unsweetened almond milk
  • 1 Tablespoon apple cider vinegar
  • .75 Cup canned pumpkin
  • .5 Cup maple syrup
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • .25 Cup melted coconut oil
  • 1.67 Cups whole wheat flour
  • 1 teaspoon baking powder
  • .25 teaspoon ground cardamom
  • .5 teaspoon sea salt

Cooking Directions:
  1. Preheat oven to 350 degrees F and oil a bread pan.
  2. In a liquid measuring container, combine apple cider vinegar and unsweetened almond milk and let sit for a few minutes.
  3. In a mixing bowl, whisk pumpkin, maple syrup, and coconut oil. Stir in almond milk and apple cider vinegar mixture until completely blended.
  4. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, cardamom, and sea salt. Gradually add dry ingredients into pumpkin mixture, and stir until all ingredients combined, be careful not to over mix. Pour into bread pan.
  5. Bake for 40 minutes and enjoy!

This was a huge hit, even for my non-vegan friends! For the full effect, pair your coffee cake with some dark chocolate chips, drizzled with warm almond butter and a hot seasonal latte. Trust me, your tastebuds won't regret it.
